I can’t even believe I have not shared this recipe with you. This is my all time favorite Sunday morning or any “day off” morning, self love, me time breakfast to make. I just love the super thin layer of crepes, a little crispy and flaky, drizzles with something sweet, topped with fruit, yumm.
INGREDIENTS:
2 EGGS
3 TBLSP. OF FLOUR
2 TBLSP. OF BUTTER
1/2 CUP OF MILK
LITTLE SUGAR AND SALT TO TASTE
INSTRUCTIONS:
Whisk eggs and flour well, then add butter and then milk. In that order, because once all else is whisked good, then milk adds in smoothly, or you will have lumps.
Heat pan and spray with cooking spray, the batter has butter in it so it will naturally not stick, pour in the pan about 1/4-1/2 cup of batter and then tilt the pan all different directions to spread it all around the pan, you will end up with very thin layer of batter, you will see it immediately cooking and lifting off the pan, shift a spatula underneath and flip, wait another 1-2 min. then fold and put on the plate.
TOPPINGS:
My favorite toppings are agave or maple syrup, cinnamon and blueberries. But you can top them with anything, even make them savory if that is what you like, mushrooms, ham, cheese, onions, options are unlimited,
The recipe above makes about 3-4 crepes, so increase the ingredients if you are making more.
