I often skip breakfast – per my conscious eating style. But I do eat breakfast when I am hungry and my body is really asking for it. This summer’s go to breakfast has been low fat cottage cheese with watermelon, I am obsessed. Cottage cheese is not particularly something I enjoy, most of the time when I have eaten it, I’ve done it because it’s suppose to be good for you and high in protein, so I just have tolerated it. But let me tell you with watermelon it is so good and it is not mediocre, it is super delicious and you feel good about eating it.
1 cup of low fat cottage cheese
cut up chunks of watermelon
add mint or basil for flavor and garnish
