Who doesn’t love mushrooms, the more the better in my opinion. Pile them on.
Today on a 90 degree summer day I decided it was time to make mushroom soup, with very simple ingredients, I hope you love it.
INGREDIENTS:
package of mushrooms, any kind
olive oil
1/2 an onion chopped ( I used red, but white is good too)
garlic crushed
rosemary, basil ( or your choice of herbs, thyme is really great choice)
2 cups of chicken stock
splash of Marsala wine ( or any wine you may have on hand)
splash of milk or cream
flour (2-3 tablespoons)
Start out with pot on the stove medium heat, drizzle olive oil on the bottom, add chopped onions, garlic and stir, let it brown for couple minutes, then add the mushrooms, herbs, depending on the size, and your preference you can chop them as big or small as you’d like. Let it brown some more, maybe another 5 minutes.
Add the flour and stir, then add the chicken stock, wine and let it simmer for 10 -15 minutes, then add a splash of milk, let it simmer few more minutes.
Here you have a delicious mushroom soup, it is also a pretty quick recipe, great for work nights or a quick lunch. Pairs really well with ciabatta or portugese bread toast and red wine.
