Matcha – Almond Cookies

These matcha – almond cookies are vegan and delicious. The original recipe calls for egg whites but the apple sauce has been substituted for the eggs and they came out amazing. They are easy and quick to make and have health benefits of green tea.


2 1/4 almond flour

1/2 cup of sugar ( stevia can be substituted)

1 tbsp. matcha powder

2 tbsp. of apple sauce

1/4 lemon juice

powdered sugar for coating


Mix all the ingredients together. Playdough type of consistency will form. Form a roll and wrap it in clear wrap, refrigerate for 1/2 hour. Set the oven to 300 degrees, and cut equal size slices, then roll them into a ball. Roll in powdered sugar, flatten a little while you evenly set them on a baking sheet. Bake for 20-25 minutes.
